Vanilla Sprinkle Tray Bake

There are those days that call for something a little naughty but equally delicious! It’s probably the huge amount of chocolate and pretty colours we’re surrounded by at the moment in the run up to Easter but my daughter was desperate for me to make her a sprinkle cake.

As always this recipe is super easy, all ingredients are readily available and the best thing is that you can adapt the decoration for whatever time of year!

I love this particular method of cake making as I’m terrible at remembering to take the butter out of the fridge before I start baking. I’m always working with a chilled lump and I’m far too impatient to wait for it to come to room temperature. So in this recipe I’ve melted the butter first on the hob then added the remaining ingredients.

I’m busy behind the scenes planning our Easter holidays, I can’t believe how quickly they’ve come round but I want the kids to join me in the kitchen as much as possible! And we’ll be busy in the garden as usual – the veggie patches are doing amazingly and our little onions are growing rapidly!

An easy vanilla sponge traybake the kids will love to help decorate


  • Cake mix:
  • 250g butter
  • 250g caster sugar
  • 4 eggs lightly beaten
  • 1 tsp vanilla extract
  • 250g self raising flour
  • Icing:
  • 250g Icing sugar
  • 2 tbsp milk



Line a tray with non stick baking paper and preheat the oven to 180 degrees C (fan)


Melt the butter in a pan on a low heat


Once completely melted add the sugar and stir


Add the eggs and vanilla extract and stir to combine


Add self raising flour and beat until smooth and silky (I use a stand mixer but a hand whisk will also work with a bit of elbow grease!)


Pour mixture into prepared tray and bake for 25 minutes or until a skewer comes out clean


After 10 minutes remove from tray onto rack and allow to cool fully


Prepare icing by adding a little milk at a time to the icing sugar and mixing thoroughly. The consistency needs to be fairly thick but easy to spread


Once cool add the icing to the top and sprinkle with decorations of your choice
