Coconut Vegan Scones

I spent a whole evening this week searching for alternative ingredients for baking – what works best for which recipe, and how much is best to substitute. I found some absolutely amazing and positive things about vegan home baking! So it seems that actually vegan baking doesn’t need to be at all scary – in fact in some recipes it’s easier than the traditional techniques.

So for this post I wanted to share a vegan coconut scone recipe that is out of this world! I found this awesome recipe from Charlotte’s Lively Kitchen (her original recipe can be found here). I was pretty limited on time when I made these but they literally took only 10 minutes to prepare, a big plus in this house. They’ve also been taste tested by some very sceptical family members and since been given a huge thumbs up! (Seconds were even requested!)

We eat ours with chia jam (recipe) and coconut yoghurt – topped generously obviously! And I’ll be experimenting with a gluten free version this weekend!

Vegan Coconut Scones

Prep Time: 10 minutes Cooking Time: 15 minutes

A quick, light and delicious scone recipe


  • 250g self raising flour
  • 50g coconut oil
  • 30g sugar
  • 1/2 tsp baking powder
  • pinch salt
  • 140ml milk (I used coconut but any plant based milk would work equally well)



Preheat the oven to 200 degrees C (fan assisted)


Grease and line a baking tray


Gently rub the coconut oil and self raising flour together to create a breadcrumb texture


Add the sugar, baking powder and salt and mix


Add the milk and combine all ingredients to form a dough


Place on the baking sheet and press out to form a circle approximately an inch or so deep (no need to roll)


Cut the dough into 6 equal triangles or circles if you'd prefer to use a cutter


Bake for approximately 15 minutes until lightly golden and the bottom sounds hollow when tapped


Leave to cool and then enjoy with a topping of coconut yoghurt or chia jam (or both!)
